Five of My Go-To Weeknight Dinner Recipes

I know the struggle: dinner time is CHAOTIC. It’s probably one of the only meals where everyone is eating at the same time, and it’s the time of day where a lot of things are in flux. You need a meal that is fast and easy! Well, now you can rest easy with five of my go-to weeknight dinner recipes. Well, I know you’re not “resting”, but at least you don’t have to dream up dinners this week 😉

1. Sheet Pan Roasted Veggies & Sausage

You know right off the bat this is going to be an easy one because it has “sheet pan” in the name. Whenever you see “sheet pan” you know that everything is cooking in the same place, which means less dishes #hollaaa

This is a crowd pleaser in my house, because who doesn’t love sausage? And you have some flexibility with what veggies you’re going to roast, too!

2. 20 Minute Easy Tortellini Bake

I probably make this at least once a month because it is SO EASY, and my husband loves it. It’s only FOUR ingredients (+ an optional garnish) and cooks in 20 minutes! Love, love, love. I also like that I can change up the tortellini each time: cheese, meat, etc.

3. Instant Pot Taco Pasta

Another crowd pleaser at my house: Taco Pasta! This is great if you’re getting tired of your normal “Taco Tuesday”. It’s basically a do it yourself Hamburger Helper. It’s only six ingredients, and you get to do it ALL in your Instant Pot. One of my favorite things about the Instant Pot, is that most recipes are just dump, turn it on, and walk away. Bonus: You’ve only got one pot to clean at the end!

4. BBQ Chicken Foil Packets

Grilling means that at least SOME of the cooking responsibility is taken off my plate, because my husband handles the grill. These are so easy to put together that you could have the ingredients set out and then let your kids build their own foil packets! Keeping them busy and in front of you while you’re prepping, instead of off in the house doing God knows what…

5. Easy Stromboli

Another recipe that your kids can help you with! This is a favorite of mine, because you can make it a little differently each time, with different fillings! I usually make two so that we have left overs for lunch the next day. If you’re working by yourself, you can have the whole thing cooked and ready to eat in about 30-40 mins (most of which is actual cooking time).
