My kids LOVE pancakes, but I HATE making them. I know they’re just a couple of ingredients, but I am not a fan of having to stand there and babysit them as they cook #notamorningperson. If you’re like “I FEEL YOU”, then check out these easy pancake muffins!

Why Pancake Muffins Are Superior to Pancakes
- No Babysitting the Stove: You’re going to put these in the oven, set a timer and walk away!
- Make a Variety: If you have more than one kid, chances are they all want a different type of pancake. NO PROBLEM. Each pancake muffin can have it’s own toppings!
- Easy to Freeze: I want you working smarter, not harder! Make a big batch of these and then throw them in the freezer. Throughout the week you can grab them and heat them up for an easy breakfast!
- The Kids Can Help: The kids can: pour the ingredients together; mix the batter; if you trust them they could even pour the batter into the muffin pans; and they can put on their own toppings!
What You Need to Make Them
These are SUPER simple: You’re just going to make your usual pancake batter. But instead of cooking them in a pan on the stove, you’re going to pour the batter into muffin pans. We use Kodiak Cakes’ pancake mix, because it’s got protein in it!
The only other thing you need are your toppings. Here are some of our favorite toppings:
- Chocolate Chips
- Apples + Cinnamon
- Blueberries / Berries
- Sprinkles
- Peanut Butter & Jelly (mix this in with a knife or toothpick after putting it on top of the batter!)
- Bacon + Cheese
Then you’re going to cook them at 350 for about 15-20 minutes. THAT’S IT.
